This has been rocking my world the past few lunches! The winter vegetables we get in our organic CSA box have been on repeat so some spicing magic was needed to make them un-boring.
Quinoa with oven roasted veggies and Bulgarian feta cheese [accept no substitutes!]. When life gives you rutabagas, Japanese salad turnips, kohlrabi and other odd roots turn the oven up high [at least 450°F], line a pan with foil, peel and slice veggies, and smother with olive oil, curry powder, cumin, cayenne pepper and Goya Adobo Seasoning! Organic, no, but my mom is an unquestionable kitchen wizard and I don’t know how to replicate that spice combo, so for now it’s a yes.
K has heralded this lunch as a winning, filling and healthy combo [quote: nutritious AND delicious!] and I am definitely in agreement!
